PB&K (Kimchi Peanut Butter Tofu Sandwich)

Instructions

  1. Heat oil in a pan
  2. Add tofu cubes to the pan
  3. Add 2 tablespoons of stir fry sauce and 1 tablespoon of honey
  4. Mix by gently moving the pan (don't use a spoon as it will make the tofu crumble)
  5. Once cooked, transfer tofu to a bowl
  6. Toast bread in a pan (no toaster allowed)
  7. Spread peanut butter on one slice of bread
  8. Spread mashed avocado on another slice of bread
  9. Place kimchi on top of the avocado
  10. Add spinach on top of the peanut butter
  11. Add the tofu in between and close the sandwich
  12. Enjoy your trip to heaven!

Budget Tips

Make your own kimchi when cabbage is in season to save money. Tofu is often cheaper at Asian grocery stores. This sandwich uses very little tofu per serving, making one block stretch across many meals.
