PB&K (Kimchi Peanut Butter Tofu Sandwich)
Ingredients
- 4 slices of bread (for two people)
- Half a block of tofu
- Crunchy peanut butter
- Kimchi
- Fresh spinach
- 1/2 avocado
- 2 tbsp stir fry sauce
- 1 tbsp honey
- Salt and pepper to taste
- Oil for cooking (avocado oil recommended)
Instructions
- Heat oil in a pan
- Add tofu cubes to the pan
- Add 2 tablespoons of stir fry sauce and 1 tablespoon of honey
- Mix by gently moving the pan (don't use a spoon as it will make the tofu crumble)
- Once cooked, transfer tofu to a bowl
- Toast bread in a pan (no toaster allowed)
- Spread peanut butter on one slice of bread
- Spread mashed avocado on another slice of bread
- Place kimchi on top of the avocado
- Add spinach on top of the peanut butter
- Add the tofu in between and close the sandwich
- Enjoy your trip to heaven!
Variations
- Extra Crunch: Add thinly sliced cucumber or lettuce
- Spicy Version: Add sriracha or hot sauce to the tofu glaze
- Wrap Version: Use all ingredients in a tortilla wrap instead of bread
Budget Tips
Make your own kimchi when cabbage is in season to save money. Tofu is often cheaper at Asian grocery stores.
This sandwich uses very little tofu per serving, making one block stretch across many meals.
